Chocolate Covered Blueberry Clusters (2 Ingredients)

Chocolate Covered Blueberry Clusters (2 Ingredients)

Chocolate covered blueberry clusters are a two ingredient sweet treat. Fresh blueberries under rich dark chocolate, with no baking needed.

Once my little one is in bed and the house is finally tidy, I love sitting down with a little sweet treat. I try to plan one or two for the week, so I have something lovely ready when a craving hits. These are one of my favourites, and so quick to make. The fresh blueberries feel bright and juicy beneath the rich chocolate.

Blueberries bring fruit, fibre and naturally occurring plant compounds to the treat. Dark chocolate contains cocoa polyphenols, including flavanols, which are being studied for their potential health effects.

Makes: 1 large cluster or 2 smaller clusters

Ingredients

  • 1 cup - approximately 150g of fresh blueberries (or any of your favourite berries)
  • 40 g dark chocolate (70 to 85% cocoa)

Method

  1. Wash the blueberries and dry them thoroughly.
  2. Line a tray with baking paper.
  3. Break the chocolate into a heatproof bowl and melt it in the microwave in 20 to 30 second bursts, stirring in between, until smooth.
  4. Arrange the blueberries in one large cluster or two smaller clusters on the baking paper.
  5. Pour the melted chocolate over the blueberries.
  6. Chill in the fridge for 30 minutes, until set. If you are in a hurry, place them in the freezer until the chocolate has set.

Tips

  • Dry the blueberries really well. Even a little water can make melted chocolate go grainy.
  • Dark chocolate at 70 to 85% cocoa keeps the treat from being too sweet next to the berries.
  • Melt a larger quantity of chocolate if you would like it thicker.
  • Store in an airtight container in the fridge.
  • The berries

FAQ

What chocolate works best?
Dark chocolate melts smoothly and balances the sweetness of the blueberries.

How do I store them?
Keep them in an airtight container in the fridge.

Why did my chocolate go grainy?
Usually it’s moisture from damp blueberries or overheating. Dry the fruit well and melt the chocolate in short bursts.

A gut friendly, healthy ageing treat

If you’re looking for a gut friendly sweet treat that fits into a healthy ageing routine, this is an easy one to start with. The blueberries bring fibre, and dark chocolate makes it feel properly indulgent without being heavy. It’s the kind of small habit I love, because the treats you actually enjoy are the ones you keep making.

I have lots more healthy sweet treats on the blog. If you like these, try my Quick Medjool Date Caramel Dip next. It’s creamy, naturally sweet and takes about 15 minutes.
