A healthy homemade twist on Starbucks brown sugar oat shaken espresso
Strong espresso, creamy oat milk, a little cinnamon and homemade date caramel this is a lovely way to bring your favourite coffee shop ritual home.
Inspired by Starbucks brown sugar shaken espresso, this version uses my date caramel instead of brown sugar syrup. It brings a rich, caramel like sweetness that pairs beautifully with coffee, with a short ingredient list and plenty of room to make it your own.
If you already have a jar of my date caramel in the fridge, this is another delicious way to use it.

Let the espresso cool before shaking it in a sealed jar.
A thoughtful approach to the ingredients
For me, a simpler homemade coffee is about choosing ingredients I enjoy and knowing how much goes into my glass. There’s no need for coffee to become another complicated wellness task.
Date caramel: sweetness with a little more substance
Blended dates give this drink its caramel-like flavour. Unlike plain sugar syrup, date caramel retains some of the dates’ fibre, although one or two teaspoons won’t make this a high-fibre drink.
Dates still contain sugar, and blending them into caramel doesn’t remove it. Think of this as a different way to sweeten your coffee, rather than a sugar-free alternative.
Start with a small spoonful and let the coffee, cinnamon and milk do some of the flavour work too.
Choosing your plant based milk
Oat milk gives a creamy finish that works beautifully with espresso. For an everyday option, look for an unsweetened milk fortified with calcium, and check whether it also contains vitamin B12 and vitamin D.
If you would like more protein, compare labels: soya milk generally contains more than oat or almond milk.
Barista milks can be lovely here too. Added oils or stabilisers help some versions perform well in coffee; a shorter ingredient list isn’t automatically more nutritious. Choose the balance of taste and nutrition that suits you.
Cinnamon for warmth and flavour
A small pinch adds that cosy, brown-sugar-style flavour without needing more syrup. We’re using it for taste this drink isn’t a treatment for blood sugar or a weight-loss recipe.
Make the caffeine work for you
You can use one espresso shot for a gentler drink, or decaf if caffeine makes you feel jittery or affects your sleep. The homemade ritual can stay exactly the same.
Tips for the best shaken espresso
Blend your caramel until smooth. A silky caramel mixes into coffee more easily than a coarse date paste.
Mix before adding ice. Stirring the caramel into warm espresso helps avoid little lumps in the finished drink.
Keep it coffee-forward. Shaken espresso is usually stronger and less milky than an iced latte. Add the milk gradually.
Use enough ice. It chills the drink and helps create that frothy finish when shaken.
Easy variations
Vanilla date caramel espresso: Add a few drops of vanilla extract before shaking.
Creamier iced coffee: Use 150 ml milk and stir everything together after pouring.
Decaf shaken espresso: Follow the same method with decaffeinated espresso.
Soya milk version: Swap the oat milk for unsweetened, fortified soya milk.
Make your coffee routine easier
Prepare your date caramel ahead and store it according to the instructions in the original recipe. Then you only need to brew, mix, shake and pour when you fancy an iced coffee.
Make the finished drink fresh for the best texture — the ice melts and the foam settles if it sits for too long.
