Serves: 2

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients

  • 400g firm tofu
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 150g mushrooms, thinly sliced
  • 2 teaspoons taco seasoning
  • 4–6 large lettuce leaves
  • 4 tablespoons tomato salsa
  • Water for cooking
  • Salt and black pepper to taste

Method

  1. Preheat your oven to 200°C (180°C fan).
  2. Drain the tofu and crumble it into small, mince-like pieces using your hands or a fork.
  3. Spread the crumbled tofu evenly across a lined baking tray and bake for approximately 15–20 minutes, turning halfway through, until slightly golden and firm.
  4. While the tofu is cooking, thinly slice the onion, pepper and mushrooms.
  5. Add the vegetables to a non-stick frying pan with a splash of water. Cook over a medium heat until softened, adding a little more water as needed to prevent sticking.
  6. Once the tofu is ready, transfer it to a separate non-stick frying pan. Add the taco seasoning and a splash of water, stirring well to coat the tofu evenly.
  7. Cook for another 3–5 minutes until the seasoning has absorbed and the tofu is slightly crispy.
  8. Wash and dry the lettuce leaves, keeping them whole to create your lettuce boats.
  9. Spoon the seasoned tofu into each lettuce leaf, followed by the softened peppers, onions and mushrooms.
  10. Finish with a generous spoonful of tomato salsa and serve immediately.

Make Healthy Eating Easier with Simple Swaps

Shop Bought Salsa Is a Great Low Calorie Flavour Booster

One of my favourite ways to add flavour to healthy meals without adding lots of extra calories is using shop bought salsa. Tomato based salsas are often naturally low in calories and packed with flavour, making them a brilliant addition to tacos, salads, rice bowls and wraps.

When choosing a salsa, I like to check the ingredients list and look for options without added oils near the top. Choosing a tomato rich salsa with simple ingredients is an easy way to add moisture, flavour and extra vegetables to your meals without relying on calorie-dense sauces.

Tofu Is More Versatile Than You Think

Tofu is one of my favourite plant based protein sources because it's incredibly versatile and takes on whatever flavours you cook it with.

For this recipe, I like to crumble the tofu and bake it first to remove some of the moisture and create a firmer, more mince like texture.

If you'd rather skip the oven, you can cook the crumbled tofu directly in a non stick frying pan over a medium heat. Allow the moisture to evaporate before adding your taco seasoning and a splash of water.

Alternatively, you could swap the tofu for vegan mock mince. Just check the nutrition label if you're aiming for a particular calorie or protein target, as different products can vary considerably.

Add More Vegetables for Volume and Fibre

One of the easiest ways to make a healthy dinner feel more satisfying is to increase the amount of vegetables on your plate.

Mushrooms, peppers and onions work particularly well in this recipe because they add plenty of flavour, texture and volume without dramatically increasing the overall calorie content.

Vegetables also provide fibre, vitamins and minerals, making them a great addition to a balanced plant-based diet.

You can easily double the vegetable mixture or serve extra vegetables on the side if you're particularly hungry.

Make It Your Own with Tacos or Wraps

I love serving this recipe in crisp lettuce boats because they're fresh, crunchy and a lighter alternative to traditional taco shells.

However, healthy eating doesn't mean you need to avoid carbohydrates.

If you're looking for something more substantial, swap the lettuce boats for crunchy taco shells, soft tortillas or a wholemeal wrap.

Carbohydrate-rich foods can provide useful energy, particularly if you're active or need a more filling meal. You could even serve the tofu mixture over rice or roasted sweet potatoes for a completely different dinner.

The beauty of this recipe is how easily you can adapt it to your appetite, preferences and nutritional goals.

Healthy eating is about building balanced, satisfying meals that work for you, rather than always choosing the lowest calorie option.
